Ingredients
3/4 cup (90g) green banana flour
1/4 cup (30g) tapioca flour
1 tbsp (8g) coconut flour
1/2 tsp (2.5g) sea salt (adjust according to your taste)
1/4 tsp baking soda
1/2 tsp apple cider vinegar
1/4 cup (60ml) olive oil or avocado oil
1/4 cup (60ml) cold water (adjust as needed)
1 tbsp dried herbs (optional, e.g., rosemary, thyme, or oregano)

Directions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine green banana flour, tapioca flour, coconut flour, sea salt, baking soda, and any dried herbs you’re using.
- In a small ball combine the olive oil and apple cider vinegar
- Add the olive oil/apple cider viner combination to the dry ingredients and mix until the flour mixture is crumbly. Gradually add the cold water, one tablespoon at a time, until the dough comes together. The dough should be pliable but not too sticky.
- Place the dough between two sheets of parchment paper. Roll it out to about 1/8 inch (3 mm) thick. The thinner you roll the dough, the crunchier your crackers will be.
- Remove the top parchment paper and cut the dough into squares or desired shapes using a knife or pizza cutter. Transfer the parchment sheet with the dough onto your baking sheet.
- Lightly brush the top of the dough with olive oil and sprinkle with coarse sea salt or extra herbs.
- Bake for 12-15 minutes or until the edges are golden brown. For extra crunch, flip the crackers over and bake for an additional 3-5 minutes.
- Allow the crackers to cool completely on the baking sheet to crisp up. Store in an airtight container at room temperature for up to a week.
