In a separate bowl, whisk together coconut oil (melted), coconut cream, coconut milk, and maple syrup.

Ingredients

  • 150 g (1.33 cups) tigernut flour

  • 1/4 cup (30 g) chocolate chips (dairy-free, soy-free) plus extra to melt for spreading on the cookies

  • 2 tbsp (30 ml) coconut oil, melted

  • 1/4 cup (60 ml) coconut cream

  • 1/4 cup (60 ml) coconut milk (full fat)

  • 3 tbsp (45 ml) maple syrup (optional, for sweetness)

  • 1/2 tsp baking soda

  • 1/4 tsp sea salt

  • 1/2 tsp vanilla extract (optional, as tolerated)

Directions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Set aside extra chocolate chips (not measured for the dough) to melt later for spreading on top of the cookies.
  • In a separate bowl, whisk together the coconut oil, melted chocolate chips, coconut cream, coconut milk, maple syrup, and vanilla extract until smooth.
  • Gradually add the wet mixture to the dry ingredients, stirring until a soft dough forms. Adjust consistency with a bit more tigernut flour if needed.
  • Scoop about 1 tablespoon of dough per cookie onto the prepared baking sheet. Flatten each cookie slightly with your fingers or a spoon.
  • Bake for 10–12 minutes, or until the edges are slightly golden. The cookies will be soft when removed from the oven but will firm up as they cool.
  • Melt the reserved chocolate chips in the microwave in short intervals, stirring between each. Once the cookies are completely cooled, spread the melted chocolate on top of each cookie for a rich chocolatey finish.
  • Allow the chocolate topping to set before serving.

Notes

  • Tigernut Flour: If you find the dough too dry, you can add a little more coconut milk or cream but be cautious not to overdo it.
  • Sweetness: Maple syrup is optional, depending on how sweet you want the cookies. If you prefer a less sweet treat, you can reduce the maple syrup or leave it out altogether.
  • Chocolate Chips: Make sure to use dairy-free and soy-free chocolate chips to keep the recipe AIP-friendly. If you're reintroducing chocolate, opt for a higher cocoa content to stay within AIP guidelines.
  • Vanilla Extract: The vanilla extract is optional, especially if you’re sensitive to it during reintroductions. You can omit it or replace it with another flavor if desired.
