Mix the Dough:

In a large bowl, combine the mashed sweet potatoes with 300g (1 ½ cups) of tapioca flour and a pinch of sea salt. Add 2 eggs. Mix well until the dough is soft but not too sticky. If the dough feels too wet, add a little more tapioca flour until it’s manageable.

Prepare the Plums:

Wash and pit 20 small plums. If you want, you can cut them in half if they’re large. Optionally, drizzle a small amount of honey inside each plum if they’re too tart. This will add a touch of sweetness to the filling.

Shape the Dumplings:

Take a small portion of the dough (about the size of a golf ball) and flatten it in the palm of your hand. Place one plum (or half) in the center of the dough, then carefully fold the dough around the plum, sealing it completely. Ensure there are no gaps or openings to prevent the filling from escaping during cooking.

Boil the Dumplings:

Bring a large pot of salted water to a gentle boil. Once the water is boiling, carefully drop the dumplings into the pot. Let them cook for about 8-10 minutes. The dumplings are done when they float to the surface of the water. Use a slotted spoon to carefully remove them from the pot and set them aside.

Coat the Dumplings:

In a shallow bowl, mix 200g (about 2 cups) of cassava or tigernut breadcrumbs with 2 teaspoons of cinnamon (optional). Heat 4 tablespoons of avocado oil in a pan over medium heat. Fry the mixture until golden brown.  Take off the heat and gently roll each dumpling in the breadcrumb mixture, ensuring it’s fully coated. 

Serve and Enjoy:
