Ingredients

  • 3/4 cup (90g) green banana flour

  • 1/4 cup (30g) tapioca flour

  • 1 tbsp (8g) coconut flour

  • 1/2 tsp (2.5g) sea salt (adjust according to your taste)

  • 1/4 tsp baking soda

  • 1/2 tsp apple cider vinegar

  • 1/4 cup (60ml) olive oil or avocado oil

  • 1/4 cup (60ml) cold water (adjust as needed)

  • 1 tbsp dried herbs (optional, e.g., rosemary, thyme, or oregano)

  • Optional Toppings
  • Coarse sea salt

  • Dried rosemary or thyme

Directions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine green banana flour, tapioca flour, coconut flour, sea salt, baking soda, and any dried herbs you’re using.

  • In a small ball combine the olive oil and apple cider vinegar
  • Add the olive oil/apple cider viner combination to the dry ingredients and mix until the flour mixture is crumbly. Gradually add the cold water, one tablespoon at a time, until the dough comes together. The dough should be pliable but not too sticky.AIP Crackers snacks, gluten-free, easy recipe
  • Place the dough between two sheets of parchment paper. Roll it out to about 1/8 inch (3 mm) thick. The thinner you roll the dough, the crunchier your crackers will be.
